Summary:
Prepare hot food items for all areas of the department. Prepare food for cold prep, Grab and Go, bulk production, short order grill and retail production. Prep food items as needed for menu cycles. May act as charge.

Responsibilities:
*Prepare hot food items for next day as indicated by menu cycle.
*Fruit and vegetable preparation and food portioning, and other bulk food preparation.
*Prepare Grab and Go and other retail items.
*Utilization of flat top grill, convection oven, and stand mixer.
*Prepare food using various cooking methods including pan frying, sauteing, boiling, grilling, baking/roasting, simmering, steaming, braising, stewing, blanching and poaching.
*Preform cooking, plating and completion of dishes in view of/interacting with customers.
*Proficiency in diet orders and where to find the information.
*Routine cleaning and sanitation of all areas.
*Assists with serving food items as indicated by established workflow.
*Food service safety practices and procedures, and temperature control.
*Prepare meals based on dietary needs and special requests.
*Read recipes, calculating conversions, and forecasting volumes.
*Assist in the training of staff.
*Deliver trays to patients.
*Competency in knife skills.
*Registers sales on assigned cash register and provides visitors with courteous, friendly, and efficient checkout service.
*Act as person in charge when coordinator is not on site.
*Other duties including putting away orders, dish washing, sweeping, mopping, and taking out trash.
Other information:
High School/GED preferred.
Five to ten years experience in high volume preparation and cooking in a hotel, restaurant, cafeteria, catering firm, government, or private institution.
Or internal candidate that demonstrates competency in four or more shifts in the kitchen
